Stir Fry Kailan with Oyster Sauce

I love to eat kailan, especially when it is lightly stir fry, soften and green. However, during my first trial of cooking such a simple dish, I FAILED. My kailan is yellow-brown (over cook), some portion of the vege, espcially the steam portion is hard, and it turned bitter.... here's why......

Kailan is a type of vege where it cannot be overcook (to make it soft) and it cannot be undercook either (like someother type of vege to maintain it's 'greenness').

So from the Tv cooking programme, I FINALLY found the proper way to prepare a stir fry kailan.

here's how:

1. cut the kailan vege into small pcs. (or you can prefer to keep the whole stem)
2. fill a pot with water and boil the water.
3. Add in 2 Tbsp of sugar and 2 Tbsp of cooking oil into the pot.
4. After the water boil, place all kailan into the pot for 2 min.
5. When kailan turned into shining-fresh green, drain the vege. (as shown in the picture)

now... you are ready to stir fry the kailan.

Ingredients

2 Tbsp oil
2 tsp    garlic
2 Tbsp oyster sauce

Methods
1. heat wok with oil, stir fry garlic until light brown.
2. add in kailan and stir fry for 1 min.
3. add in oyster sauce and stir fry for 1 min.
